
| Chilled Peach Soup |
Ingredients
1/2 teaspoon ground
cloves
2 pounds peaches, peeled and coarsely chopped
2 cups orange
juice
3 tablespoons lime juice
1/4 cup honey
1 1/2 teaspoons ground
cinnamon
1 teaspoon ground ginger
1 teaspoon diced candied ginger
1
8-oz. container vanilla low-fat yogurt
Directions
Bring first eight ingredients
to a boil in large saucepan. Reduce heat and simmer for ten minutes or until
peaches are tender. Let mixture cool. Process mixture in blender until smooth,
stir in yogurt. Cover and chill. Garnish with mint. Serves 10 small cups.
